The cost per pound includes the processing fee and is charged on the hanging carcass weight at the butcher.
A whole beef carcass will weigh approximately 700 to 900 pounds. and should yield about 400 to 500 pounds of wrapped beef.
A half beef will weigh approximately 350 to 450 pounds. and should yield about 200 to 250 pounds of wrapped beef.
A split quarter will weigh approximately 225 pounds. and should yield about 100 to 125 pounds of wrapped beef.
